Here’s an infallible recipe for making peace with picky eaters in your home. Whatever your family’s food preferences may be, the kids will surely be asking for seconds of this little yummster.
Serves: 4 hungry people
Preparation time: 20 minutes
Cooking time: 15- 20 minutes
1000 gr chicken breast minced
1 big carrot grated
1 big onion finely chopped
1 tomato grated
1/2 bunch of parsley finely chopped
1 big free range egg
5 tbs oat flakes
3 tbs extra virgin olive oil
1 tbs Dijon mustard (optional)
1 tsp dried thyme
1/2 tsp sweet smoked paprika
1 tbs dried oregano
salt & pepper (choose the quantity freely)
Put a saucepan on a medium heat and add 3 tablespoons of olive oil and the chopped onion, cook for about 7 minutes, until lightly golden, then set aside to cool.
In the meantime, mix together all the remaining ingredients in a large bowl and use your hands to blend it well. Add the caramelized onion to the mixture and stir well. Manually form the patties to be 2-3 centimeters thick and get ready to grill them.
You can use the same pan you used for onion, just wipe it with a paper tissue first, to get the small pieces out, otherwise they might burn. Basically, you’ve also got a choice to bake them in the oven, but they won’t come out as juicy.
The pan should already be hot when you put the patties in. Let them sit for 3-4 minutes in high heat and then turn the heat to medium and put on a lid. After 6-7 minutes (total 9-11 minutes) turn over the patties and grill them without the lid for another 8-10 minutes. And that’s it! You’ve got yummy, fluffy chicken patties all ready to be served! Feel free to freeze any left over mixture, but make sure to use it within a month.
I personally prefer to serve these patties with Greek yogurt sprinkled with paprika and a grilled pita bread!
