Here is another easy recipe that is sure to hit it big with the kids. At least my picky eaters stretch a ear-to-ear smile when I tell them there’s chicken meatballs for lunch.
Serves: 6 very picky eaters
Preparation time: 20 minutes
Cooking time: 30 minutes
800 gr chicken breast minced
1 big carrot grated
1 big onion finely chopped
1/2 bunch of parsley or dill finely chopped
1 big free range egg
1/3 cup white glazed rice
1 tbsp dried basil
salt & pepper
1 cube of vegetable or chicken stock
1 small pack of tomato sauce
Fill a large sauce pan with water by 2/3 and put on high heat to boil. Add a cube of vegetable or chicken stock and tomato sauce.
Meanwhile, mix all the ingredients together in a bowl, roll a handful at a time to form a meatball and put it in the boiling soup. Once you dropped in the last one, lower the heat and leave half-covered to cook for 30 minutes.
Serve warm, swimming in the soup or accompanied by a seasonal salad.
