Luscious dairy-free apple muffins

It’s only a few hours before Christmas, and just in case you are still searching for some super quick fix for the desert issue, here’s a foolproof solution guaranteed to work.

Makes: 24 little muffins or 2 big loaves
Preparation time: 20 minutes

Baking time: 30 minutes for the muffins, 1 hour for the loaf

Ingredients:

5 big apples (I like to mix green and red apples, put 3 red and 2 green ones, for example)
3 cups whole wheat flour
1 cup olive oil
4 eggs
1.5 cups sugar (you can use either brown or white, or a mix)

1 tablespoons ground cinnamon

Preparation:

muffins-449746_1280Clean, peel and cut the apples into big chunks. Add flour and cinnamon, mix well then leave aside.

Use a hand mixer to beat the eggs and sugar. Add oil and beat for another couple of minutes at high speed. Pour the rest of the flour and mix well with a spatula. Combine with the apple mixture and stir.

Preheat the oven at 180°C. Grease muffin cups or use paper liners. Fill muffin cups 2/3 full and you are ready to bake!

Leave them in the oven to bake until golden, or a toothpick inserted in the middle comes out clean.

Enjoy them with a hot cup of coffee or tea and share them with children who come to sing the carols.
